Chocolate Chip Banana Bread (Gluten Free)




So moist and delicious.  
This Banana Bread does not last long at our house!



1 cup ripe Bananas, mashed (about 2 medium)
2 Eggs, beaten
1/2 cup Canola Oil
1/3 cup Buttermilk or Plain Yogurt
1 cup sugar
1 3/4 cup Pamela's Baking and Pancake Mix
1/4 tsp. salt
1/2 cup Walnuts, chopped
1/2 cup Mini Chocolate Chips
(Enjoy Life brand is Soy Free)


Preheat oven to 325 degrees F.
In a large bowl, mix together the wet ingredients.
(bananas, eggs, oil and buttermilk)
In a separate bowl, combine the sugar, baking mix and salt.
Add the dry ingredients to the wet.


Then add the walnuts and chocolate chips.
Stir until well mixed.
Pour into a lightly oiled loaf pan.
Bake for 1 hour and 20 minutes
or until fully baked 
 (a toothpick inserted into the center should come out clean)
Cool for 10 minutes and remove bread from pan.
Serve warm.
