Overnight Swiss Muesli (Gluten Free)


This is my take on a Swiss favorite called Bircher Muesli.
Silky and creamy - and because it is served cool, it is a great way to enjoy oats in the warmer months.
It is great for breakfast but we have enjoyed it as a light summer supper too.
Add your favorite fresh or dried fruit and nuts and seeds for endless variations.



2 cups Gluten Free Oats
3 cups Milk
1 small container Greek Yogurt 
(your favorite flavor)
1 Apple, grated

Toppings:
Fresh berries
Nuts
Honey or Turbinado Sugar


Grate the apple with a box grater - peel included.
In a large bowl, combine the oats, milk, yogurt and grated apple.
Cover with plastic wrap and refrigerate over night.
The next day, stir the muesli and top with berries
(I toss the berries with some Turbinado Sugar)
and chopped almonds.
Serve and enjoy!
Makes about 8 servings
