Protein Power Pancakes (Gluten Free)


These pancakes are so delicious and easy to whip up in your blender.
I orginally found this recipe on Pinterest and have tweaked it a little each time I made it over the years.  My son has declared them his favorite. We make them for breakfast, lunch and dinner (not all in the same day!). 


1 cup Gluten Free Oats
1 medium Banana
1/2 cup Cottage Cheese
4 Eggs
1/4 cup Milk
2 tsp Baking Powder
1 tsp Vanilla
1 tsp Cinnamon or Pumpkin Pie Spice
Optional:
Fresh Blueberries or Mini Chocolate Chips

Heat your griddle to low/medium.
Process the oats in the blender until they become a coarse flour.
Add all remaining ingredients and blend until smooth.
Stir in the blueberries or your favorite mix-ins.
Lightly oil or butter your griddle.
Pour 1/4 cup of batter onto the griddle.  Cook until bubbles appear and turn to cook the other side until golden.  
Serve with Maple Syrup and fresh fruit.
Serves 2-3
