Roasted Sweet Potatoes


A delicious and nutritious 3 ingredient side dish.  
Great with grilled meats or Thanksgiving Dinner!

Sweet potatoes are not just for Thanksgiving.  We enjoy them all year.  They are great with
a cozy winter meal and equally wonderful served at a summer cookout.  They are more nutrient packed than white potatoes and are packed with flavor too.  You can change up the spices any way you like, but be sure to try them with my BBQ Rub - Yum!




2 Large Sweet Potatoes
1 Tbsp Olive Oil
1 Tbsp BBQ Rub

Preheat oven to 400 degrees F.


Scrub two large sweet potatoes,


chop into 1-2 inch cubes and spread out on a large baking sheet.


Drizzle the potatoes with the oil and sprinkle with the BBQ Rub.
Toss with your hands to coat well.


Roast in the oven for 20-25 minutes or until the potatoes are tender.
Serves 4.
