Banana Nut Bread

Classic banana nut bread.  
So moist and flavorful you'd never guess that it is made without oil or butter.  


I love banana bread and so does my family.  In our opinion the more nuts the better - but feel free to omit them if your family disagrees.  Most recipes call for quite a lot of butter or oil, so when I discovered this recipe - and my family's response (2 thumbs up!) I felt a little less guilty about indulging a little more often.  Feel free to serve for breakfast, brunch or as an after school snack.

3 ripe Bananas
1 Egg
1/2 cup Water
2 cups Pamela's Gluten Free Baking and Pancake Mix
1 cup Sugar
1/2 cup Walnuts, chopped 
1 tsp Baking Powder
1 tsp Baking Soda
1/4 tsp Salt

Preheat Oven to 350 degrees F.


Blend the bananas, eggs and water with an electric mixer.


Add the dry ingredients and mix until well combined.


Pour into a lightly oiled loaf pan.




Bake for 50-55 minutes or until a toothpick inserted comes out clean.
Allow to cool for 10 minutes in the pan, then turn out onto a rack to cool.
