Old Fashioned Vegetable Soup


Loaded with beef, tomatoes and your choice of vegetables in a rich broth.
Just like your grandmother made.


Cold weather calls for soup!  This soup is based on my grandmother's recipe.  I am reminded of her every time I make this.  She used to have a big pot simmering on the stove - ready to feed a crowd.
This is a large batch for your crowd.  It freezes beautifully, so any leftovers can be enjoyed again in the time it takes to thaw in the microwave.  We enjoyed it many times after a late baseball practice or game.  It will warm you up on those cold nights and will free you up to assist with homework. :)
It is comfort food that is just as good for you as it tastes. 

1 lb Ground Beef
2 large Onions, chopped
2 Tbsp Worcestershire Sauce
2 tsp Salt
2 QT Chicken Stock
1 (28 oz) can diced Fire Roasted Tomatoes
4 large Carrots, sliced or cubed
1/2 lb fresh Green Beans, cut
1 (1 lb) package frozen Baby Lima Beans (Butter beans)
1 (1 lb) package frozen Corn
1 cup frozen Peas


Add the ground beef and onions to a large pot or dutch oven.


Cook over medium heat until the beef is browned and the onions are tender.
Add the Worcestershire sauce and salt and stir to combine.


Pour in the broth and tomatoes.


Add all of the vegetables and bring to a boil.
Lower the heat and simmer, covered, for 1 hour.
Salt and pepper to taste and serve!
