Peanut Butter Chocolate Pretzel Bars - Vegan & Gluten-Free



The perfect combination of peanut butter cups and chocolate covered pretzels.
If you are craving a rich indulgent treat that is both vegan and gluten-free, this is for you!  My family goes crazy for these.  They are sweet, a little salty, creamy,crunchy, peanut buttery and chocolaty.  Beware - they are highly addictive!

Recipe:

2 cups Semi-Sweet or Dark Chocolate Chips
(Enjoy Life Brand is Soy and Dairy Free)
1 1/2 cups Creamy Peanut Butter
2 sticks Vegan Butter
(Earth Balance)
2 cups Powdered Sugar
1 bag (8 oz) Gluten-Free Pretzels, crushed
1/2 cup Peanuts, chopped

In a small microwavable bowl, combine 1/2 cup of the peanut butter and the chocolate chips.  Microwave for 30 seconds at a time, stirring until the chocolate is completely melted and combined with the peanut butter.
In a separate bowl, beat the remaining 1 cup of the peanut butter with the vegan butter, until smooth and creamy.
Add the powdered sugar, one cup at a time.  Beat until very well combined.
Crush the pretzels in a food processor.  Add to the peanut butter/butter/sugar mixture and mix by hand.
Spread into a lightly oiled 9"x13" baking dish.
Pour the chocolate/peanut butter mixture over top and spread evenly.
Top with the chopped peanuts.
Refrigerate for at least one hour before cutting into squares.
Best served cool.
