Favorite Gluten Free Baking Mixes / Flour Blends

Pamela's Baking and Pancake Mix


This is one of my favorite gluten free flour blends.  It is especially good in cake and cookie recipes.  I think the almond meal is the key.  It gives my cakes and muffins a lighter texture and better structure.  When I use some other gluten free flours the texture can be dense and gummy.

This blend  contains baking powder, baking soda and Xanthan Gum.  So, you will not need to add those to your recipe.  

I use this blend in several of my posted recipes (Lemon Breakfast Bread and Almond Oat and Chip Cookies) and there will be more to come! This also makes a great thickener for soups and when flour for dredging meat and vegetables is needed.

Bisquick Gluten Free


This baking mix makes the BEST Waffles!  They are golden and crispy on the outside and soft and fluffy on the inside.  They are as easy to make as waffles made with traditional Bisquick and our family honestly likes the Gluten Free version better.

Our son's absolute favorite "Cheeseburger Pie" is made with this mix - look for my post.

Other recipes on the box are pancakes, biscuits, strawberry shortcakes, pizza crust and ultimate chicken fingers.  We have tried them all with great success.  Other recipes are listed on their website.

This mix is also found in most grocery stores.

Bob's Red Mill Gluten Free 1 to 1 Baking Flour


This blend lives up to it's promise of being a gluten free 1 to 1 substitute for wheat all purpose flour. The recipe on the back of the package is identical to the Nestle Toll House Chocolate Chip Recipe.
These chocolate chip cookies turned out quite good.  There was a slight grainy texture, but barely noticeable and the taste was very good.  They were not quite as chewy as the traditional Toll House version, but over all a very good substitute.  My family "Hoovered" them - so there you go! 
I have also used this blend to make my Vanilla Glazed Doughnuts with excellent results.
I will continue to use it in some of our family's favorite treats - so be on the lookout for future posts!
