Sausage Lentil and Kale Soup


Hearty and healthy - and so delicious!
This soup is a family favorite and we have it often in the cold months.  It is easy to make and is chocked full of vitamins from the kale, fiber from the lentils and flavor from the sausage and broth.  It is ready in about 40 minutes - not bad for a soup and if freezes very well too.  I have used many different sausages, depending on my mood and what I have on hand.  I have also used collard greens in place of the kale which is also very good.  If your New Years Resolution is to improve your diet - this is a great start and you will love it because it tastes great - the "good for you" part is a bonus!

Swiss Milk Rice


This traditional Swiss dish is creamy,warm and comforting.  Perfect for a cold winter night.  Our family loves it with fruit on the side for a cozy dinner.  We also love eating the leftovers for breakfast.  With a little more sugar it would also make a yummy dessert.
