Sausage Lentil and Kale Soup


Hearty and healthy - and so delicious!
This soup is a family favorite and we have it often in the cold months.  It is easy to make and is chocked full of vitamins from the kale, fiber from the lentils and flavor from the sausage and broth.  It is ready in about 40 minutes - not bad for a soup and if freezes very well too.  I have used many different sausages, depending on my mood and what I have on hand.  I have also used collard greens in place of the kale which is also very good.  If your New Years Resolution is to improve your diet - this is a great start and you will love it because it tastes great - the "good for you" part is a bonus!


12 oz Sausage, chopped
(any type will work - our favorite is Trader Joe's Sweet Apple Chicken Sausage)
1 large Onion, chopped
1 Tbsp Olive Oil
2 quarts Chicken or Beef Broth
1 cup dried Lentils
1 large bunch Kale, stemmed and chopped
4 Tbsp Apple Cider Vinegar
Parmesan Cheese for topping


In a large pot or dutch oven, saute the sausage and onion in the olive oil.


When the sausage is browned and the onions are tender,


... add the chicken or beef broth and bring to a boil.


Rinse the lentils well.


Add the lentils to the pot.  Cover and and lower the heat to simmer for 30-40 minutes,
until the lentils are tender.


Add the Kale.  It will look like a lot, but it will wilt down as you stir it into the soup.


Pour in the apple cider vinegar and cook for 10 minutes.


You are ready for a delicious and nutritious meal!  
We love to top our soup with some grated Parmesan cheese.
Serves 6-8.
