Summertime is a great time to make use of your crockpot.  Assemble the ingredients in the morning and forget about it while you spend the day at the pool or beach.  No need to turn on the oven and warm up the house.

Overnight Swiss Muesli (Gluten Free)


This is my take on a Swiss favorite called Bircher Muesli.
Silky and creamy - and because it is served cool, it is a great way to enjoy oats in the warmer months.
It is great for breakfast but we have enjoyed it as a light summer supper too.
Add your favorite fresh or dried fruit and nuts and seeds for endless variations.

Lazy Lasagne (Gluten Free)



This lasagne is made with just a few ingredients that are assembled quickly when you have a few free moments in the day and then refrigerated until you are ready to bake.  It also freezes very well. 
I usually have most of the ingredients in my freezer and pantry.

Caramelized Onion Quiche


A very elegant quiche made with a few basic ingredients.  
The Gruyere cheese is the stand out.  
My family adores this quiche. They prefer their quiche unadulterated - that is not messed up with the addition of spinach or broccoli. I caught one of my sons trying to get every morsel out of the bottom of the pie plate.  The best complement a cook could receive!
