Corn Pudding (Gluten Free)


A southern favorite that is the perfect side dish for any summer meal.



This is a dish that I grew up with and that was (and still is!) served at many family gatherings.  It has also been frequently requested at our house while our boys were growing up.  It is practically a dessert, but we serve it as a side dish that goes with almost anything. A guaranteed crowd pleaser!

2 cups Corn
1 tsp Salt
1/4 tsp Ground Pepper
1/2 cup Sugar
(this is actually less than the original recipe calls for!)
3 Tbsp Cornmeal
3 Eggs
1 1/4 cup Milk
1/4 cup Butter (1/2 stick), melted

Preheat oven to 375 degrees F.


Whisk all of the ingredients except the corn until well blended.


Stir in the corn.


Pour into a buttered 9x9 inch baking dish
Bake for 30 minutes, or until set.
