This recipe is the result of lots of trail and error that led to the discovery of the "secret ingredient" -- ground oats (Shhh!).
2 tsp Salt
1 tsp Ground Pepper
2 Eggs, lightly beaten
2Tbsp grated Onion

1/2 cup Milk
1 cup ground Gluten Free Oats
Fresh or Dried Basil, Oregano and Rosemary, chopped
2 cloves garlic, finely chopped

Preheat oven to 375 degrees F.
In a large bowl, combine all ingredients. Shape into 1-2 inch balls (I use a small scoop to keep them the same size). Arrange on a baking sheet and bake for 20-30 minutes, until browned.
Add the meatballs to simmering marinara sauce and serve on top of your favorite gluten free pasta.
Makes about 3 1/2 dozen medium sized meatballs
