Three Bean Salad



The perfect salad for a Summer Picnic!
So easy - just open some cans of beans and corn, chop a few veggies and herbs, toss with vinegar and oil - Done and Yum!


1 can Black Beans, drained and rinsed
1 can Kidney Beans, drained and rinsed
1 can Garbanzo Beans, drained and rinsed
1 can of Corn, drained and rinsed
3-4 Persian Cucumbers
(they have very small seeds - I love them!)
1 Bell Pepper
1/2 cup cherry tomatoes
Fresh herbs - Basil, Oregano and Italian Parsley
1/4 cup Olive Oil
1/4 cup Cider Vinegar
1 Tbsp Sugar
1 1/2 tsp Salt

Finely chop the herbs; dice the cucumbers; remove the seeds and ribs from the bell pepper and dice; cut the cherry tomatoes in half. 
In a large salad bowl, whisk together the chopped herbs, oil, vinegar, sugar and salt. Add the cucumbers, bell pepper, tomatoes, beans and corn.  Toss well with the vinaigrette.  Refrigerate for 30 minutes or longer and serve.
