Brown Sugar Bourbon Glazed Salmon




Salmon is one of my favorites.  I could eat it fixed almost any way - but this is definitely my family's favorite way.  It's sweet and salty with a little crunch from the pecans.



1-1/2 lb. Salmon Fillets
1/2 cup Brown Sugar
1/4 cup chopped Pecans
4 Tbsp. Bourbon
1/8 tsp. Salt

Preheat oven to 325 degrees F.
In a small sauce pan, combine brown sugar, pecans and Bourbon.  Stir until the sugar is dissolved  and it comes to a boil. Remove from heat.
Place salmon on a lightly oiled foil lined baking sheet. Spoon 2 Tbsp of the sauce over the fillets and bake for 12 minutes.  Be careful not to over cook the Salmon. Serve with the remaining sauce spooned over the top.
Serves 4-6
