A super easy, weeknight meal that combines
the very popular Zoodle with traditional Noodles.
Zoodles are noodles made with zucchini that are spiral sliced.
In the time that it takes for your pasta to boil,
you can have diner on the table.
1 box Gluten Free Spaghetti
(Barilla is our favorite)
2-3 medium Zucchini, spiral sliced
(if you don't have a spiral slicer,
you can cut the zucchini into thin strips with a vegetable peeler)
2 Tbsp Olive Oil
2 cloves Garlic, finely chopped
fresh Basil, finely chopped
Salt and Pepper to taste
Parmesan cheese
Prepare your gluten free spaghetti according to the package instructions.
While the pasta is boiling,
spiral slice the zucchini to make your zoodles in a large skillet.
Add olive oil and garlic. Sauté over medium/low heat for 2-3 minutes.
Stir in the fresh basil, salt and pepper.
Add the cooked spaghetti and toss together.
Serve topped with Parmesan cheese and more fresh basil.
