Chocolate Covered Banana Bites


A refreshing summer treat that is low in sugar and super simple to make.



3 ripe Bananas
2 cups Dark Chocolate Chips
(I use Nestle Dark Chocolate which is Soy Free)
2 Tbsp Coconut Oil


Line a baking sheet with foil (I like the non-stick type).
Slice the bananas into 1/4 inch and arrange them on the pan.
Put them into the freezer for 1-2 hours, until frozen solid.


Melt the chocolate chips and coconut oil in a double boiler or in the microwave.


Dip each banana slice into the chocolate.
I have this cool tool from Pampered Chef, but a fork will work just as well.


Place back on the foil lined baking tray and return to the freezer 
to set the chocolate.
Serve and marvel at how quickly they disappear!
