Sautéed Onion Jasmine Rice


Delicate Jasmine rice topped with mild, sweet onions and a hint of garlic.


This rice dish was declared "the best rice ever" by my family.  It was part of the extra special meal my friend Maria prepared for my family when I was recovering from minor surgery. (See my last post for the amazing Pork Tenderloin recipe!)  This rice really is the best side for any meat. You absolutely have to try it!

1 cup Jasmine Rice
2 cups Water
1 tsp Olive Oil
1 tsp Salt
1 1/4 tsp Garlic Powder (divided)
2 large Onions
1 Tbsp Butter
1 Tbsp Honey

Combine the rice, water, olive oil, salt and 1 tsp of the garlic powder in a medium sauce pan.
Bring to a boil, cover,  turn the heat to low and simmer for 20 minutes.


While the rice is cooking, thinly slice the onions and sauté them on medium/low heat with the butter.


When the onions are translucent, add the remaining 1/4 tsp garlic powder and the honey.


Continue to saute the onions until they become golden.
When the rice is done, fluff it with a fork and serve topped with the caramelized onions.
