Jam & Oat Cookie Bars


A sweet treat made with simple ingredients perfect for a quick dessert or snack.


These bar cookies are made with things that I usually have handy in my pantry.  So, when we are craving a treat, theses are easy to whip up and are always very appreciated at my house!  They can be made with any flavor jam, so whatever you have will work.  I used blackberry this time and they disappeared in no time.  I hope that your family will enjoy them too!

1 Cup Gluten Free Oats
1 cup Gluten Free Flour Blend
1/2 cup Brown Sugar
1/4 tsp Baking Soda
1/4 tsp Salt
1/2 cup Coconut Oil
3/4 cup Jam (Blackberry, Apricot, Strawberry or Marmalade)

Preheat oven to 350 degrees F.


 Process the oats in a food processor or blender to create a coarse meal.
Then combine the oats, GF flour blend, brown sugar, baking soda and salt.
Stir until well blended.


Add the coconut oil and stir until all of the dry ingredients are moistened.


Press 2/3 of the mixture into an 8x8 inch baking pan that has been lined with parchment paper.
Then spread the jam evenly over the top.


Distribute clumps of the remaining dough over the jam.



Bake for 35-45 minutes.
Cool for 15 minutes, then carefully lift the cookie with the parchment paper 
and allow to cool completely on a wire rack.
When the cookie is room temperature, 
peel off the parchment paper and cut into 16 even bars. 

Store in an airtight container at room temperature or in the refrigerator 
- they also freeze very well.
