Bolognese Sauce

A classic meat sauce for pasta.
I keep my freezer stocked for a home cooked meal
that's ready in the time it takes to boil pasta.
My go-to for the busiest days!

1 large Onion, chopped
2 large Carrots, peeled and chopped
2 Tbsp Olive Oil
2 lbs Ground Beef
2 tsp Salt
4 cloves Garlic
1 1/2 cup Red Wine
3 (28 oz) cans San Marzano whole, peeled Tomatoes
1 (6 oz) can Tomato Paste
Fresh Basil
Fresh Oregano

Saute the onions and carrots in the olive oil, until the onions are tender.

Add the ground beef.

Cook until the meat is browned.

Pour in the red wine and cook for 5 minutes until slightly reduced.

Add the whole tomatoes and tomato paste.
Stir and break up the tomatoes with a wooden spoon.
Bring to a boil and then reduce heat to low.
Simmer the sauce for 1 -2 hours.
(The more patient you are the better the sauce!)

Stir in the fresh herbs, salt and pepper. Simmer for an additional 10 minutes.
Serve over your favorite pasta.
Freezes beautifully!
