A wholesome, sweet treat made at home, with simple ingredients.
We love to snack on granola bars. They are a great treat to take on a hike or to pack in a lunch box. There are many great gluten-free options available at the store, but they can be pricey. They are easy and fun to make a home with just a few ingredients that you can vary in many ways. This is one of our favorite combinations. 1/4 cup Honey
1/4 cup Butter
1/4 cup Brown Sugar
1 Tbsp Peanut Butter
1/2 tsp Vanilla
1 Tbsp Cocoa Powder
2 Cups Gluten Free Rolled Oats, coarsely ground
1 cup Gluten Free Chocolate Rice Cereal
3/4 cup Gluten Free Pretzels, crushed
In a small sauce pan, melt the butter with the honey.
Stir in the brown sugar and peanut butter.
Bring the mixture to a boil and then remove from the heat.
In a mixing bowl, combine the oats
(process into a course meal in your blender or food processor),
cereal and crushed pretzels.
Pour the wet ingredients over the dry ingredients and stir until well combined.
Line a 9x13 inch dish with parchment paper and pour in the mixture.
Spread evenly and press down to make sure the granola bars hold together.
Refrigerate for 2 hours.
After the granola has hardened in the refrigerator,
lift it out of the pan with the parchment paper and place onto a cutting board.
With a sharp knife, cut into bars.
Wrap each bar in plastic wrap or parchment and store in the refrigerator.
Makes 12 granola bars.
