Sheet Pan Chicken Fajitas


Another One Pan dinner idea! Classic fajita ingredients all on one Sheet Pan.


I am always thinking about new ways to make sheet pan meals.  There are endless combinations and this is one of my new favorites.  Fajitas are healthy and light, but very satisfying.  Preparation involves chopping some veggies to toss with some chicken and spices and throwing everything onto a  sheet pan.  The best part (other than the fabulous taste!)- only one pan to clean!

1 lb Chicken Tenders
2 Onions, sliced
3 Bell Peppers - red, yellow and orange
2 Tbsp Olive Oil
Trader Joe's Chile Lime Seasoning Blend 
(or your favorite Tex-Mex spices)
Corn Tortillas
Guacamole and Cilantro (optional for serving)

Preheat oven to 425 degrees F.


Spray a large sheet pan with oil - or for easy cleanup, line with foil and spray with oil.
Arrange the chicken, onion and peppers on the tray.
Spray liberally with oil and sprinkle with the spices.


This Chile Lime seasoning is so good!  
I have been using it on so many things.  Besides this recipe, I love it on avocado toast!


Bake for 25-30 minutes, until chicken is done and the vegetables are tender and roasted.


Serve with corn tortillas and top with super simple guacamole and cilantro.

Serves 4-6.
