Vanilla Chia Seed Pudding



Enjoy a breakfast or dessert packed with powerful nutrients and fiber.
With a texture like tapioca, you will love this creamy, easy to prepare treat!


I first tried Chia Pudding at a restaurant in Austin called True Food Kitchen.  I fell in love and found that it was very easy to make at home.   Chia pudding has become popular because it is nutrient dense and delicious.   I'm always looking for ways to get more fiber in my diet and each serving of this pudding delivers 12 grams.  Chia seeds are also high in protein and iron.  If you haven't tried it yet, you are missing out!  I enjoy it for breakfast, but it makes a great dessert as well.  Similar to overnight oats, you prepare it in the evening and allow it to "soak" in the refrigerator overnight.

Single serving:

4 oz milk (regular, coconut, almond, cashew - your choice)
1 tsp Raw Sugar (agave nectar or honey)
1/4 tsp Vanilla
3 Tbsp Chia Seeds



Chia seeds can be found in the health food section of most grocery stores.
I buy mine from Trader Joe's.


Pour the milk into a glass jar or container.


Add the sugar,


... vanilla,


... and chia seeds.


Stir well. Let it sit for 10-15 minutes and stir again, to keep the seeds from settling.
Refrigerate at least 3 hours - overnight is best.


Top with banana and unsweetened coconut or your favorite fruits and nuts.
