Gnocchi with Sun Dried Tomatoes and Spinach (Vegan & Gluten-Free)


An easy and delicious one-pot meal, ready in 10 minutes!

My family has fallen in love with gnocchi.  They are a tender pasta made with potato.  There are several on the market now that are gluten-free, so I keep our pantry well stocked!  This dish is great on a busy night - but is also elegant enough to serve guests.  All of the ingredients can be kept on hand in your pantry and refrigerator so that you can toss it all together for a very quick and very delicious dinner!

Recipe:

1 (16-17 oz) package Gluten-Free Gnocchi
5 Tbsp Vegan Butter (Earth Balance)
4 oz Sun Dried Tomatoes in Oil
1 tsp minced Garlic (2 cloves)
3 tsp fresh Basil, finely chopped
6 oz Fresh Spinach

Cook the gnocchi according to the package instructions.
In a separate large pan, melt the vegan butter and stir in the sun dried tomatoes, garlic and the cooked and drained gnocchi.
Stir in the basil and spinach.
When the spinach is wilted and heated through, this dish is ready to serve!
Serves 3-4
