Here is how to enjoy Steel Cut Oatmeal any day of the week without the usual 20-30 minute cook time. It is creamy, vegan, gluten-free, and so satisfying - not to mention so good for you! I like traditional oatmeal - but I LOVE Steel Cut Oatmeal - and so does my family!

3 cups Water
1 cup Steel Cut Oats (Gluten Free)
Some great brands are Udi's, Bob's Red Mill, Arrowhead Mills and McCain's.
1 cup Whole Milk
Toppings:
Turbinado Sugar (Raw Sugar) or Brown Sugar
Any type of nuts or seeds
Cinnamon
Fresh or Dried Fruit
The night before:
Combine water and oats with 1/4 tsp salt. Stir and bring to a boil.
Cover and turn off the heat.
Leave on your stove top over night.
In the morning:
Pour in the nut milk. Stir and heat over medium/low. Bring to a low boil and simmer for 5 minutes or until the oats thicken to the desired consistency. The oats will thicken as they cool, so usually 5 minutes is about right.
Enjoy with your favorite toppings!
