Vegan and Gluten-Free Cauliflower Soup


This Cauliflower Soup is creamy and comforting as well as Gluten-Free and Plant-Based.

The combination of spices and coconut milk make this soup so tasty!  The addition of lemon juice brightens the flavors and makes this soup one that you will want to make again and again.  You can also feel good about eating clean, healthy ingredients that will nourish as well as comfort.

Recipe:

2 Tbsp Vegan Butter
1 large Onion, chopped
1 large Cauliflower Head, chopped
1-2 cloves Garlic, minced
1 tsp Salt
Ground Pepper to taste
1 tsp dried Thyme
1/2 tsp dried Rosemary
1/2 tsp ground Coriander
2 Tbsp Potato Flour or Rice Flour
6 Cups Vegetable Broth
Juice of one Lemon
1 (13.5 oz) can Coconut Milk

In a large pot or dutch oven, saute the onion in the vegan butter for 3-5 minutes, until the onions are soft.  
Add the cauliflower, garlic, salt, pepper, thyme, rosemary, coriander and potato or rice flour.  Stir to combine and cook for 2-3 minutes.  Continue to stir to keep the vegetables from sticking.
Pour in the vegetable stock.  Turn the heat up to med/high and bring to a boil.  Then cover, reduce the heat and simmer for 20 minutes, until the cauliflower is tender.
Add the coconut milk and lemon juice.    
Puree with an immersion blender until smooth.
Serve topped with chopped green onion.
