Made with simple ingredients. So moist and delicious!
Banana Bread is one of those things that is just intensely comforting to me. I love toasting a slice in the morning and spreading some creamy butter on top - Vegan Butter that is!
I converted a recipe that I posted earlier for Gluten-Free Banana Bread, by switching out the egg and milk to plant-based versions. The results were very satisfactory! Give it a try!

Recipe:
1 Flax Egg (1 Tbsp. Ground Flax Seed + 2 1/2 Tbsp. Water)
3 Ripe Bananas
1/2 Cup Almond Milk
1 Cup Sugar
1 1/2 Cup Gluten-Free Flour Blend -- Recipe: https://youtu.be/cLsDjkldDAo
1/2 Cup Almond Flour
1 tsp. Baking Powder
1/8 tsp. Salt
1/4 tsp. Xanthan Gum
1/2 Cup Walnuts, chopped (optional)
Preheat oven to 350 degrees F.
Mix the flax egg and set aside.
In a large mixing bowl, mash the bananas with a fork . Stir in the flax egg and almond milk.
In a separate bowl, combine the sugar, Gluten-Free Flour Blend, almond flour, baking powder, salt and xanthan gum. Mix well with a wire whisk.
Add the dry ingredients to to the wet ingredients and stir until incorporated. Stir in walnuts if desired.
Pour the batter into a non-stick or prepared loaf pan and bake for 60-65 minutes.
Cool for 10 minutes in the pan and then turn out onto a wire rack to cool. Enjoy!
