Good Morning Granola

Don't let the ingredient list fool you -
this granola is couldn't be easier.
Stick with the measurements for oats, oil and maple syrup
and play around with the other ingredients -
either using nuts and seeds thats you have on hand
or choosing what your family loves.

4 cups Gluten Free Rolled Oats
(I used Trader Joe's - there are several out there)
1 cup Walnuts, chopped
1 cup Pecans, chopped
1 cup Sunflower seeds, raw
1 cup Coconut, sweetened
1/4 cup Flax Seeds
1/3 cup Coconut Oil, melted
1/3 cup Maple Syrup
1 Tbsp. Cinnamon

Preheat oven to 350 degrees F.
In a large roasting pan, combine all of the dry ingredients.  Pour over the coconut oil and mix thoroughly.  Pour over the maple syrup and mix so that all of the dry ingredients are coated. Spread the granola evenly in the pan.
Bake for 40 minutes, removing the pan from the oven every 10 minutes to stir and spread out the granola so that it toasts evenly.
Cool the granola in the pan.  Add dried cranberries or raisins at this point if you choose. Store in an airtight container.
Serve with milk as a breakfast cereal or use it as a stir-in for yogurt or topping for ice cream.
